Father’s Day Entree and Dessert

Dad is going to love the rich flavors of this dish:  A thick, juicy, boneless pork chop with a savory rub matched with a sweet & sour peach/radish relish, and some beet and goat cheese stacks to keep it summery.  Follow that up with a French inspired dessert of Apple Tatin dressed up with dried cranberries and dried figs (if the season is right, fresh figs are an even better choice!)  Enjoy, and let Dad know how special he is!
